Potatoes ala' Stan


Ingredients (use vegan versions):


  • 2 cups of herb roasted potatos. (To make herb-roasted potatos, boil about six whole red or white potatos, then let them cool in a pan of cold water. Dice the potatos and spread them on a oiled cookie-sheet. Top them with lot's of herbs and spices. (Whatever you happen to have around will do! I like to use paprika, pepper, onion powder, garlic powder,
  • A mix of whatever veggies that you like. I use the following:

    Ingredients (use vegan versions):


    • Spinach leaves
    • Red bell-pepper sticks
    • Thin carrot slices or triangles
    • Artichoke hearts
    • Thin sliced green onion
    • Zucchini or yellow summer squash wheels
    • Fresh raw sweet corn kernels
    • Roma tomato slices


    Directions:

Lay out the spinach on a plate, top with the other veggies (except the
green onions.) Top the veggies with the herb roasted potatos, then
top it all with the green onion. (At this point, I like to warm up
the whole thing in a microwave for about 2 minutes.)


Then, top the whole yummy mess with either:

  • Hollandaise sauce
  • Salsa
  • or an herb salad dressing


Directions:



(I sometimes use all three!)


Serves 2.
