Fried Cinnamon Puffs


Ingredients (use vegan versions):


  • 2 3/4 cup all purpose flour
  • 3/4 cup dry sweetener (I like sucanant)
  • 1 package dry yeast
  • 3 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 cup vegan soymilk
  • 1/4 cup water
  • 1/4 cup non-hydrogenated vegan margarine
  • 2 Ener-G Egg Replacers (I always use the powder, but assume
  • applesauce, etc, would work as well)


Directions:



Oil for deep frying.


Mix flour, 1/4 c of sweetener, yeast, 1 tsp cinnamon and salt
into the universal bowl (with universal blade) of your food
processor. Process until mixed.


Combine soy milk, water and margarine in a saucepan, and mix
until warm. Mix in Ener-G Egg Replacers.


Pour liquid mixture through the food processor tube while
processing, until you've made a smooth batter. Let stand
for about 30 minutes (until bubbly). Process on/off once
to stir down.


Mix remaining sweetener and cinnamon. Fry the batter
in oil heated to 400 F/200 C by the spoonful (until
brown, about 1.5 minutes). Drain on paper towels, and
roll in cinnamon mixture.
