Funeral Pie


Ingredients (use vegan versions):


  • 2 cups raisins
  • 2 cups water
  • 1/2 cup sucanat
  • 3 Tablespoons flour
  • 1/2 teaspoon salt
  • 3 Tablespoons lemon juice
  • 1 teaspoon grated lemon rind
  • 1 Tablespoon soy non-hydrogenated vegan margarine
  • 1 baked 9-inch pie shell


Directions:



Makes 1 pie.


Combine raisins and water in a pot and simmer until raisins are plump
and soft (about 20 minutes), stirring frequently.


Remove raisins from heat. Combine flour, sucanat,and salt, and add to
raisins. Return to heat and simmer, stirring, for five minutes. Add
lemon juice and rind. Remove from heat and add margarine. Cool before
pouring into pie shell.


Top with your favorite "whipped cream" if you want!


(By the way, I don't know why this is called Funeral Pie. It is a
traditional Pennsylvania Dutch pie my grandmother used to make.)
