Popper (Potato Whopper!)
Ingredients (use vegan versions):
- 2-3 potatoes
- 1/4 cup green peas
- 1/4 cup vegan bread crumbs
- salt to taste
- pepper to taste
- lemon juice (optional)
Directions:
Serves: 2-4.
Preparation time: 20 min.
steam potatoes and peas. mash them both. mix with vegan bread crumbs. If the
mix becomes too thick, add water. add salt and pepper to your taste.
lemon juice is optional, but again, this gives it a good taste.
spray some veg oil on a pan, form the mix to nice round patties and
bake them on both sides. you may substitute butter instead of veg oil,
and it tastes better too. the burger may have the usual onion, tomato
and try cucumber slices too...with catsup of course !
