Black Bean Tofu Burritos with Green Salsa


Ingredients (use vegan versions):


  • 1 bag frozen corn
  • 1 small can chopped green chiles
  • 1 jar green tomatillo salsa (trader joe's is good for Californians, or Arriba, or whatever)
  • 1 package regular tofu, drained
  • 2 cans black beans
  • desired condiments (chopped veggies, salsa, guacamole, ...)
  • flour tortillas


Directions:



Serves: 4 to 6.


Preparation time: 15 min or less.


This is so easy it is embarassing. Fling the corn into a large saucepan.
Cook over med heat for a bit until it thaws. Add the chiles (more or less
depending on how spicy you like it), drained black beans, salsa, and
mashed tofu. Cook and heat through. Serve on warmed flour tortillas.
