Hawaiian Tacos


Ingredients (use vegan versions):

  • 2-3 cans of pinto beans
  • tacos or tortilla chips (your choice of grain)
  • green bell pepper
  • red bell pepper
  • yellow onion
  • 2 medium tomatoes
  • 1 large avocado
  • 1/2 cup of pineapple chunks (drained, if canned)
  • grated cheddar vegan cheese


Directions:


Boil pinto beans until consistency is
syrupy. After beans have cooked, mix on
medium with a hand mixer for 1-2
minutes.


While beans are boiling, chop and dice
peppers, onions, and tomatoes. Mix in
large bowl. Add avocado grated
vegan cheese. Mix avocado
thoroughly with pepper, tomato, and
onion. Add dry pineapple.


Beans and avocado mix are two layers on
the taco, or if using tortilla chips,
cover chips.


Serves: 4-6


Preparation time: 25 minutes
